- White Poison... Maida
Man first discovered that if the living layers of the wheat grain were removed, there was a soft substance inside. Knowing that it was shallow, Ruche especially, nicknamed that soft Maya 'Maida'. According to the Armenian 'maid' (suku mari) and Arabic 'maida' (dinner), the name 'maida' has been established as a symbol of royal dinners!
Moglai Lord Babur did not like the rotis of India, and brought the cooks and ingredients from Iran and Uzbekistan to make 'nan' rotis. Maida came here with them! It was a taste of luxury for Mughals and Europeans alike!
During the World Wars when there was a grain shortage, Tamilnadu rice millers developed an easy method of separating wheat from plains. Maida has spread to the general public like a trailing horn and has started to rule our cuisine. Wheat flour became nominal. Finally, the traditional dishes like bobbats, kajjikayas and sajjappals also became addicted to maida.

As maida was green due to pigments called xanthophylls, they started bleaching it to make it white with harmful chemicals. For this, 'Azodicarbonamide' is used to make plastic and synthetic leather, explosive chemical Acetone Peroxide', topical medicine 'Benzyl Peroxide', paper, detergents, paste, cosmetics, 'Hydrogen Peroxide' used to wash sores, potassium used in epilepsy. Chemicals like bromide, chlorine and chlorine dioxide have been poisoned as a favorite state.
In a test conducted by the Center for Science and Environment (CSE), it was found that 84 bread and bakery products contain potassium bromate/iodate, which is a carcinogen. As early as 1917, the organization asked the Indian government to ban the use of these bleaching agents! Countries like Australia, Japan, Brazil, New Zealand, Canada, UK, China have banned these bleaching agents. Azodicarbona mid has been completely banned by the European Union. These chemicals, which should not be in our food, are used excessively just for extra taste, appearance and appeal. Maida is not nutrition but slowpoison.
Mental diseases with Maida
Mida is dangerous if not bleached! The gluten in it destroys the intestines and prevents the food from being digested. It should be understood that if the nutrients are spread throughout the grain except the floury part of the wheat grain, it is because of the presence of gluten in that flour. Gluten acts as an enemy of nutrients and pushes them away from the intestines. It causes diarrheal diseases like 'srpoo'. It gets into the brain and acts like a euphoric opiate, making us addicted. So if you get used to Maida, you can't leave it! Gluten residues have been found in cerebrospinal fluid in patients with schizophrenia and postpartum psychosis. Those who frequently eat breads, biscuits, naan, burgers, pizzas, pastas, samosas, Mysore bajjis, maida sweets and panipuris made with maida are at risk of cancer and brain diseases. It has a bad effect on the intestines, liver and kidneys!
Maida is a symbol of charm and marketing magic. There is no need to get caught in Maida Vishakora. The only solution to this problem is to forget wheat and use flour!

Ingredients required:Peanut flour - cup, Chilli - quarter spoon, Curd - cup, Asafoetida - a little, Water - two cups, Salt - quarter spoon, Poppy seeds - spoon, Curry leaves - few, Coriander - grated - spoon.
Preparation method:In a bowl add gram flour, chilli, salt, asafoetida and curd and mix well. Add two glasses of water and mix. Put this mixture in a pan and cook it on low flame. When everything is close, pour it into the back of a long steel plate and make it all spiral with a spatula. Ghee should not be applied to the teeth. After cooling for ten minutes, cut two inches long with a knife. Khandvi is made by kneading each part by hand. It is good if you put everything in a steel plate and put a spoon on top. Sprinkle all the coriander. This khandvi is good with hot tea in the evenings.
Carrot Delight
Ingredients:Carrot - 500 grams, Sugar - half cup, Corn flour - quarter cup, Water - cup, Ghee - two spoons, Coconut powder - two spoons.
Preparation Method:Cook the carrots in a pressure cooker till two whistles. After it cools down, add it to the mixer and make a puree. Strain the puree to make it smoother and take it in a bowl. Add sugar, corn flour and water to it and mix well. Put this mixture in a pan and cook. After five minutes add ghee and keep stirring. When everything is close, close the oven and spread it flat on a plate covered with ghee. After an hour cut it into pieces and sprinkle coconut powder on top.
